Man, this has been the longest project of my life!

The title says it all. After replacing a burnt exhaust valve and getting my
engine back together - a process that took five months - the biggest problem
I'm left with is an ill-behaved idle. It's "hunting" from ~1200 up to
~1800, then dropping back down to ~1200 for a few seconds before repeating.
It does not do this all the time, of course. It also likes to drop down
well below the 800 mark and act like it's gonna die - and this is after
replacing the plug wires.

Any suggestions? I've tweaked the throttle body adjustment, didn't really
seem to do too much.

Sure sounds like a vacuum leak to me. Start checking the complete intake using an unlit propane torch.
